With the help of First Nation Chef Matthew Potts, they launched their first Ukrainian kitchen pop-up in January 2023 at Edmonton's oldest country saloon, which quickly gained popularity among Canadians. The kitchen's authentic flavors, including varenyky (perogies), cabbage rolls, and borshch, sold out in a single day, demonstrating the demand for traditional Ukrainian cuisine. In June 2023, with the support of Scott Kelly, Ukraine's Kitchen opened its first dedicated kitchen space at Butchers & Packers, marking a significant milestone in their journey. By January 2025, they had proudly opened their own manufacturing space, which doubles as a retail cafe, allowing them to share their award-winning Ukrainian flavors with a wider audience. I visited Ukraine's Kitchen with high expectations, eager to taste the authentic flavors of my homeland. Unfortunately, my experience was a letdown. The varenyky, which I was looking forward to the most, were overcooked and lacked the delicate balance of flavors I've come to expect from traditional Ukrainian cuisine. The borshch, while visually appealing, was too salty and didn't have the richness I've experienced in other Ukrainian kitchens. The service, although friendly, was slow and seemed disorganized. As someone who has been following the journey of Ukraine's Kitchen and admires their mission to support newcomers and unite communities, I was disappointed to find that the execution fell short of their inspiring story. Perhaps it was an off day, but for the prices they're charging, I expect a more polished experience. I hope they take feedback constructively and work on perfecting their craft, because with a bit more attention to detail and quality control, Ukraine's Kitchen could truly live up to its potential and become a staple of Edmonton's culinary scene.
